Having another busy night and just don’t know what to fix for dinner while a million things need your attention? How about an easy prep meal that you throw together in a few minutes and the oven does the rest? Here’s a one dish meal that is easy and tasty.
One Dish Chicken and Rice Bake
1 chicken – cut in serving sized pieces
(Don’t feel like cutting up a chicken? Easier yet is to buy the pieces you want in a package. We are thigh and leg people in this household.)
2 cans of cream soup (Mushroom – my favorite, Chicken, or Celery in any combination)
(I’m a purist so I use 2 cans of the same flavor.)
2 cups white rice
1 cup of water
In the bottom of a 9 x 13” pan mix soups, water, and rice. Place chicken parts on top of the rice in the pan. You may sprinkle with seasonings if you wish. Cover with foil.
Bake at 325’ F for 45 minutes. Uncover and bake 15 to 30 minutes more to brown chicken. Check periodically for doneness of the chicken and to be sure that rice does not become dry.
