Recipe Corner : 3-Ingredient Peanut Butter Cookies

I think this is going to be the simplest recipe you
have ever tried. I don’t know about you but I have
never heard of a cookie dough that only had 3
ingredients in it. Just 3! I am serious. If I hadn’t
of sampled the cookies myself I wouldn’t have
believed it. How quick and easy to make at
the last minute when your son reminds you an
hour before pack meeting that he promised to
bring cookies.
I was talking with a friend from church and
she gave me this recipe. A couple days later
I happened to be at her house and I got to
sample some, made by her husband. I was
surprised.

Three Ingredient Peanut Butter Cookies
1 egg
1 cup sugar
1 cup peanut butter (creamy or chunky, your
choice)

Preheat oven to 350’ F. Do not use a mixer. Why
I don’t know. That‘s what I was told. Also, do not
double the recipe. If you want to make more,
just make a second batch of dough fresh. Why? I
don’t know, but that is what I was told.

Put your 3 ingredients in a mixing bowl and stir it
with a fork until well blended. Use a teaspoon to
measure the dough. Roll the dough into a ball and
dip it in granulated sugar. Place on the cookie sheet
and smash with a fork once north to south, and once
east to west. Bake the cookies for 12 to 15 minutes.
Makes about 2 dozen. I like my cookies a little
sweeter so I would put a rounded cup of sugar into
my dough.
