What’s Cooking in Mama’s Kitchen?
Acini de Pepe Pasta Salad
I first had this salad at a church women’s conference, and I loved it! Just a tip from someone who knows, women at church are wonderful cooks, with one caveat, Jell-o and the 1001 ways of preparing it. Yuck! Who would have thought I would like something with Miracle Whip and sweet pickle relish in it? I only like mayonnaise on occasion and I have only been a fan of dill pickle relish. I am serious when I tell you that this was really good. Since that time I have also had it with red seedless grapes cut in half mixed in. I guess I have developed a more sophisticated taste for things because I liked it with the grapes in it. In the past, if someone tried to put fruit in my salad, I’d have made a face and picked the grapes out. So I guess I have developed a little bit of refinement. (No comments from the peanut gallery! Oh, did I mention that this awesome salad has nuts in it?)
6 cups cooked and diced chicken
1 cup cashew nuts
6 cups diced celery
16 ounces cooked Acini dePepe pasta
½ cup chopped green onions
1 cup mayonnaise
1 cup sweet pickle relish
1 cup Miracle Whip
Salt and Pepper to taste
Mix together and refrigerate. Can serve on top of a leaf of lettuce.
