I recently came across and tried making a recipe for meatloaf with a bit of a different taste to it – Italian flavoring – and it was pretty darn good, if I do say so myself. I guess the evidence is in my favor since my family and I ate it in two days. I had made it with two pounds of ground turkey. So below is the recipe if you would like to get a new take on an old family favorite.
Italian Meat Loaf
2 pounds ground beef or turkey or –
1 ½ pounds beef or turkey and ½ pound ground pork
1 cup bread crumbs, Italian seasoned 2 eggs
1 chopped medium onion 3 tablespoons grated Parmesan cheese
1 teaspoon oregano ½ teaspoon salt
1 cup canned tomato sauce or diced tomatoes 1/8 teaspoon pepper
1teaspoon thyme 1 clove garlic, minced
Beat the eggs and then add all ingredients into the bowl and mix well together. Spray a loaf pan with non-stick cooking spray. (Much easier to clean the pan afterwards if this is done.) Put mixture in loaf pan and shape. Bake on 375’ F for 1 and a half hours. (Note: If made with turkey the color of the inside of the meat loaf will not be as dark as if beef were used. Don’t want you to think it is still raw.) Serves 6. Goes well of course with mashed potatoes or boiled baby red potatoes with seasoning and a little olive or canola oil.
